The “Makurazaki Bonito Fisherman’s Special” was chosen champion of a local delicacies competition for two consecutive years. It is a specialty of Makurazaki City in Kagoshima Prefecture, the top producer of katsuobushi dried bonito in Japan. The dish took inspiration from fishermen’s meals full of freshly fished bonito that they ate on board.
A bowl of the Fisherman’s Special contains rice generously topped with fresh bonito, dried bonito flakes, and bonito crackers. Poured into the rice bowl is dashi broth made with dried bonito. It was developed, for two years, in aims of shining spotlight on the local specialty, dried bonito. The dish’s popularity is now contributing to the revitalization of the area through various food events. Dried bonito is full of dreams!
